Greetings from Dublin.  You might be thinking, what are you doing in Dublin?  Well, drinking Guinness, listening to lots of great, live music (“sessions”), taking in the sites, and, oh yeah, I’m enrolled at the Dublin Cookery School (photos from a very busy first week below).

Cooking school in Ireland?  Does that sound crazy?  At first, I was excited, what an amazing adventure.  Then, doubt set in.  What the heck am I doing going all the way to Ireland for a cooking class?

But I couldn’t be happier.  Really feel as though I’m in my element and that’s a good feeling.  Can’t remember the last time I was excited to wake up and get my day going.  Want to soak up everything and learn as much as I can.

The class has exceeded my expectations in just a few days.  The instructors, the facility, my classmates, the dishes we’ve prepared, all wonderful.  Hard to believe how much we’ve done in such a short time.  In just the first week, I deboned a chicken, filleted a fish, made gnocchi from scratch (spaetzle too), prepared various salads and soups, baked several types of bread, chocolate eclairs, financiers, an assortment of cookies (biscuits, as they’re known here)…to name a few.  Can’t wait to see what lies ahead.

Hi Robyn, Ireland has been wonderful so far. What part of Ireland is your family from? Have you been? Any places in particular that you recommend visiting? I'm looking forward to heading down to Cork and also the West Coast. It's been a busy couple of weeks, but hoping to post a few recipes soon.
